Coconut Snake Gourd (chichinda)

                             Hello friends, don't be scared to see the name. Snake gourd or chichinda is a very rare vegetable. It is a seasonal vegetable of south-east Asia. These vegetables don't look good at all. But, if you cook it in a proper way, then it will be very delicious. Today we will cook this in aa exciting and delicious way. I named this dish " Coconut Snake Groud".
  • Preparation time 30 mints.
  • Cooking time 20 mints.
  • For 5 peoples.
INGREDIENTS
  1. 2 Snake gourd finely chopped.
  2. 2 cups of grated coconut.
  3. Mustard oil.
  4. Mustard seed
  5. 1 Dry red chili
  6. Salt 
  7. Turmeric powder.
  8. Sugar
PROCEDURE
  1. At first, take a saucepan, add 4 cups of water boil it then adds 1 tablespoon of salt and the chopped snake gourd. Then boil it till the vegetable become tender.
  2. Now, if the snake gourd is tender then strain the water from it. and keep aside.
  3. Take another saucepan to add 3 tablespoons of mustard oil. Once the oil is hot enough add 1 tablespoon of mustard seed and 1 dry red chili.
  4. Then add all the boiled snake gourd into the oil. Continuously stir it to be careful that the mixture should not burn and stick with the pan.
  5. After the medium cooking now adds the grated coconut. Again stir it. Then add salt to taste. add turmeric powder and a pinch of sugar. 
  6. Mix them all very well once you can see the oil is realizing turn the flame off.
