Bengali style Chicken Kosha Recipe
Most of the nonvegetarian peoples love Chicken. When they heard about any of the chicken recipes, their mouth became watery. Even I am also a chicken lover but being a typical Bengali, my first preference would be " Bengali Style Chicken kosha". Today we are going to learn how to cook the Tr" Bengali style Chicken kosha" trust me if you try this at home you won't regret it.

- For 4 peoples.
Ingredients
- Chicken ( 600 gms)
- Mustard oil ( 1 and a half cups)
- 1 tablespoon vinegar.
- 2 medium-size onion.
- 2 large red tomato.
- 4 to 5 dry red chilies.
- 8 to 10 garlic.
- 1-inch ginger.
- Turmeric powder.
- Red chili powder.
- Cumin powder.
- Salt.
- Sugar.
- 2 Bay leaves.
- Garam masala powder.
Preparation for cooking
Step-1 [Chopping]
- Finely chop the onions and tomatoes and keep aside.
- Then make a fine paste of gingers and garlic.
- Take the Dry red chillies and soak them into 1/2 boul of water for 10 minutes. Then make another fine paste with them.
Step-2 [ Marination]
Take big boul to add the chicken then add 2 tablespoons of mustard oil, 1 tablespoon of salt, 1 tablespoon of red chili powder, 1 tablespoon of vinegar, 1 tablespoon of ginger-garlic paste.
Mix them all with your hand and cover for 15 to 20 minutes.
Cooking Method
- At first, take a saucepan to add 1/2 cup of mustard oil and wait for it to become hot enough to add 2 bay leaves after few seconds add onions fry them till it becomes golden brown.
- Then add the remaining ginger-garlic paste. saute them till the raw smell is gone.
- Now add the finely chopped tomatoes and continue to stir them.
- At this stage add 1 tablespoon of sugar, 2 tablespoons of turmeric powder, 1 tablespoon of cumin powder, and salt to taste.
- Mix them finely and cook till the oil starts separating. [ you can add a little bit of water if it's needed].
- Now add the Marinated Chicken and continue to mix it with the masala. After 3 to 4 minutes of cooking add the Dry red chili paste and 2 tablespoons of mustard oil.
- Again mix them and cover the saucepan for 10 minutes in medium flame.
- Check the chicken, if it is soft and onions are melted then add 4 cups of hot water into the saucepan.
- Again cover it till the water dries. At last add 1/2 tablespoon of garam masala powder, give it a mix and turn the flame off.
Enjoy the " Bengali style Chicken Kosha" with Steam rice, Fried rice or Roti.
