Duck Egg Curry
This is a popular curry recipe in India. It is similar to the normal egg curry recipe with a small spice surprise. Duck egg is a very good protein and fat supplement for children or those people who are weak at this moment. We can easily get Duck eggs from our local market. Today we are going to know how to cook "Duck Egg Curry" in an interesting way.
- Preparation time 20 minutes.
- Cooking time 30 minutes.
INGREDIENTS
- Duck eggs.
- Small potatoes.
- Dry red chilies (3)
- Onion puree (2 large)
- Tomato puree (3 medium)
- Ginger garlic paste (1 tablespoon)
- Salt
- Turmeric powder.
- Garam masala powder (1 tablespoon)
- Raw milk (1 cup)
- Saffron ( one pinch)
- Mustard oil (1 cup)
PREPARATION
- Pill off the potatoes and boil the eggs before.
- Marinate them with a pinch of salt and turmeric powder.
- Then fry them in mustard oil till it becomes golden brown. keep them aside for later use.
- Make a paste of those 3 dry red chilies.
COOKING METHOD
- Take a saucepan to add 3 tablespoons of mustard oil once the oil is hot enough, add the ginger garlic paste and saute them for 2 minutes. then add onion paste and cook till the opinion become brown.
- Now add the tomato paste and mix them all and salt to taste in this stage. then cover the saucepan.
- after 5 minutes add a splash of water and red chili paste and turmeric powder.
- Add 1/2 cup of water to the spices and give them a good stir.
- Now add the fried eggs and potatoes and cover the pan along with some more water for about 10 minutes.
- meanwhile, make a liquid mixture of milk and saffron.
- uncover the pan and if the gravy is thick enough add the milk. and 1/2 spoon of garam masala powder. Give it a quick stir and wait for a light boil. then turn the flame off.
